80 % Grenache – 20 % Syrah
Long Maceration to extract the maximum of
color and tannins to prepare the blend.
Ageing in stainless steel vats and in 600 liters barrels ( « demi-muids ») for 12 months
with Burgundian style lees steering (“bâtonnage”).
Tasting Notes :
Ruby-red with vivid purple highlights.
This wine releases aromas of fresh little red berries,
some notes of licorice and spices.
Bodied and good structure on the palate with melted tannins, a long and delicate finish of black Olive.
Service /Food & Wine pairing :
To be served between 16 – 17°C.
Suits particularly on a lamb meat Tajine with eggplant, or on a duck confit.
Ageing potential : 8 years
