We are located in an Amphitheater open to the south backing onto the Montagne Noire (foothills of the Massif Central) in a Mediterranean climate that is hot and dry in summer and mild and humid in winter.
Regarding the soil, we are fortunate to have quite diverse terroirs, varying between clay-limestone plateaus and schist strata.
These different specificities allow us to produce “airy” wines!
What makes the Minervois appellation so rich is the diversity of its soils. Rivers like the “Argent Double” (Double Silver) or the Ognon coming from the “Montagne Noire”, have created a series of terraces of limestone, shale, sandstone, rolled pebbles or marble.
Each soil bring different notes to the grapes and wines elaborated with these fruits.
Here at Tour Saint Martin our strength is to have winegrowers who bring together this diversity of soils. This allows us to blend or isolate certain grapes to always get the best out of them.
